Indoor catering lives or dies on service routes. A beautiful hall with one narrow kitchen door will serve its far tables twenty minutes late unless somebody designs around that door.

The experience
We survey the room first: pass location, door widths, distance to the furthest table, lift capacity if there is one. Only then do we set the menu format and the brigade size.
Buffets are built as multiple mirrored islands rather than one long queue, and plated service is run in synchronised waves so no table watches another eat.
